Directions
- Prep the oven and butter: Preheat oven to 325°F. Butter your baking dish well.
- Melt the butter: Melt the 1/2 lb butter and set aside to cool slightly.
- Whip eggs + sugar: Beat eggs and sugar on medium-high speed for 5 to 10 minutes until thick, pale yellow, and glossy.
- Mix dry ingredients: Sift together cocoa powder and flour, then stir in 2 sachets Beck’s Broth Protein Hot Chocolate.
- Combine: Reduce mixer speed to low. Add vanilla and optional amaretto or liqueur, then add the cocoa flour mixture. Slowly pour in the melted butter and mix just until combined.
- Set up the water bath: Pour brownie pudding batter into the buttered dish. Place it inside a larger baking dish. Carefully add hot water to the outer dish until it reaches halfway up the sides of the brownie pudding dish.
- Bake: Bake for 1 hour and 10 minutes.
- Cool: Remove from the water bath and let cool before serving.
Notes:
- If you like it extra ooey-gooey, eat it warm. If you are a next-day kinda gal, chill it and enjoy firm edges with a soft centre.
- Pour the hot water in after the pans are already on the oven rack if you want an easier, less splashy setup.
- Serve it with vanilla ice cream, whipped cream, or fresh berries for the ultimate brownie pudding moment.
